The Best Pot Roast Recipe

I never was any good at cooking beef before now. I'm only 2 1/2 years away from 60 years old and I'm finally learning how to do a pot roast, one of my favourite meals.

So here's my recipe, for those of you who inquired about it:

Buy a roast that says "Pot Roast" on the label...not one that says "Oven Roast".

In a large high-sided skillet/dutch oven on the stovetop, sear all sides of the roast in a little olive oil.

Using something like a package soup mix (any kind will do really), cover the roast with the soup mix. Pepper whole roast. Put back into pan, and add enough tomato juice (plain kind or V8) to go about half way up the sides of the roast. Cover with a tight lid and put on low heat. Cook on low for a good 3 to 4 hours, the longer the better. If it's large, do 4 hours.

(I like it falling apart)

About an hour before it's done, add peeled potatoes, onions, carrots, or whatever you like for veggies. (Peeled butternut squash is good here too).

Let meat sit for a minute or two after you take it out. You can cut it with your fork, it's so tender and done!

A one pot meal, too.
