Recipe for a Sunday


From the Crow Cottage kitchen... I invented a sandwich yesterday that was so good, I thought it deserved a place here...

I'll call it:

Pita Pesto Pocket

One small size whole wheat & oat pita pocket, the very tip-top sliced off to get inside.

Spread basil pesto on one interior side of the pita.

Spread hummus on the other interior side of the pita.

Layer in:

* Lettuce (romaine or whatever you love)
* Tomatoes (chopped small)
* Onion, chopped small (red or yellow)
* Blue cheese crumbled
* Cheddar cheese shredded

(crumbled feta would go fabulously in here too)

That's it. What a delight it was, and I think the secret was the basil pesto...

Been working today (Sunday) as well as yesterday, so not much to write about here. We are still waiting to hear when Paul's next surgery will be. Then we'll begin going down that road of healing.

It's a sunny but very cold winter's day here in the Northeast United States. I've put out a big dish of shell-peanuts on the back deck, and the squirrels and one very brave blue jay have cleaned it all up. Those critters were raised right - they never leave food on their plates!
